mmmmm.....
You asked for it....they're dangerous!
Chocolate-Coconut Bars
(similar to Hello Dollies)
3 c finely ground cookies (12 oz.)
1/4 c sugar
3/4 c unsalted butter, melted
1 c chopped pecans
1 c chocolate chips
1 14 oz. can sweetened condensed milk
1 1/2 c sweetened shredded coconut
Preheat oven to 375. Line a 15x10 rimmed baking sheet with parchment paper.
In a large bowl, stir together cookie crumbs, sugar, and butter until combined. Evenly press mixture onto the parchment and up the sides. Bake, turning halfway through, until firm, about 10 min. Transfer to a wire rack to cool.
Sprinkle cooled crust evenly with pecans and chocolate chips. Pour condensed milk over top, spreading to cover completely, but make sure it doesn't go over edge. Sprinkle with coconut.
Bake until coconut is toasted, 10-15 min. Transfer to rack, cool completely. Trim edges, if desired, and cut into equal-sized bars.
***I'm a low-sugar freak.....I used whole wheat animal crackers(the only cookies in the house) for the cookies, and added a bit of cocoa powder;I cut out the sugar for the crust completely, and substituted unsweetened coconut. With the s.c.milk, it's still veerrrrryyyy sweet.
